CABBAGE IS A GREAT leafy green vegetable for juicing. Cabbage is round in shape with layers of leaves. The inner leaves are often lighter in color than the outer leaves because they have protection from the sunlight. They belong to the Cruciferae family of vegetables along with kale, broccoli, collards and Brussels sprouts.

There are many varieties of cabbage. Green cabbage is the most familiar kind, with Danish, domestic, and pointed being the top three picks of the cabbage family. The Red cabbage has a little more vitamin C, but the most nutritious is savoy cabbage Bok choy, or pak-choi, is true Chinese cabbage.

Cabbage Patch Kids are a doll line created by Debbie Morehead and Xavier Roberts in 1978 and originally called "Little People". These dolls turned the Cabbage from a mere vegetable into a household name associated with children, fun and games.

Research reveals that crucifers provide significant cardiovascular benefits as well. From the University of Hawaii, researchers have shown that, at the tiny concentration of just 100 micromoles per liter, a phytonutrient found in cruciferous vegetables, indole-3-carbinol, lowers liver cells' secretion of the cholesterol transporter, apolipoproteinB-100 by 56%! Apolipoprotein B-100 (apoB) is the main carrier of LDL cholesterol to tissues, and high levels have been linked to plaque formation in the blood vessels.

Cancer Protection

Cruciferous vegetables offer a much lower risk of prostate, colorectal and lung cancer, even when compared to other vegetables. In a study of over 1,230 men conducted at the Fred Hutchinson Cancer Research Center in Seattle, WA, those eating about 15% of the sample had a 48 percent lower risk of prostate cancer, compared to men who ate fewer than one serving a day (also about 15% of the sample). This associaton was independent of other dietary factors, such as fat intake, and for medical factors, such as history of prostate cancer in a father or brother. Kristal and Jennifer Cohen,Ph.D., from the Center'a Cancer Prevention Research Program, led the data alalysis. Janet Stanford, Ph.D., head of the Center's Prostate Cancer Research Progam, also participated. All are from the Center's Public Health Sciences Division. The bottom line is they say is that if you eat a lot of vegetables, you can cut your risk of prostate cancer by about 45 percent, Says Alan Kristal, D. P H., co investigator of the study. "And, if some of those vegetables are from the cruciferous family, like broccoli and cabage, you may reduce your risk even further."

During World War II Europe had a low meat availability so the comsumption of lots of cabbage, broccoli, Brussels sprouts, and other members of the cruciferous family of vegetables were consumed and with this the number of breast cancer rates dropped dramatically amoung European women.(RichardA. A study of Chinese women in Singapore, a city in which air pollution levels are often high, found that in non-smokers, eating cruciferous vegetables lowered risk of lung cancer by 30%. In smokers, regular cruciferous vegetable consumption reduced lung cancer risk an amazing 69%. There has been much research that has focused on the beneficial phytonutrients in cabbage, particularly its indole-3-carbinole (I3C), sulforaphane, and indoles. These two compounds help activate and stabilize the body's antioxidant and detoxification mechanisms that eliminate cancer-producing substances.

I3C has been shown to improve estrogen detoxification, which reduces the incidence of breast cancer. I juice one entire cabbage often in my veggie drinks. No one can eat an entire vegetable like cabbage unless they juice it. I add it to my carrot, onion, yam, sweet potato drink. I switch different veggies according to what I have on hand. Tamoxifen is a selective estrogen receptor modulator. Even though it is an antagonist in breast tissue it acts as partial agonist on the endometrium and has been linked to endometrial cancer in some women. Therefore endometrial changes, including cancer, are among tamoxifen's side effects. With time, risk of endometrial cancer may be doubled to quadrupled, which is a reason tamoxifen is typically only used for 5 years. The cabbage, conversely, does not cause cancer in other areas of the body.

Red Cabbage: The flavonoid pigments, called anthocyanins, provide fruit and vegetables with beneficial blue, purple and red coloring. Scientists have identified 36 anthocyanins in red cabbage, including eight that have never before been detected in the cabbage. Emerging evidence suggests that anthocyanins may provide cancer protection, improve brain function and promote heart health. Anthocyanins have also been shown to have potential as 'fat-fighters' according to a Japanese study. Fruits with anthocyanins include cranberries and blueberries.

Hyperthyroidism

Cabbage helps to suppress thyroid function. The vegetables from the cabbage family, including broccoli, cauliflower, cabbage, turnips, mustard greens, kale, spinach, Brussels sprouts, kohlrabi, rutabagas, horseradish, radish and white mustard, are often called goitrogens because they have been shown to decrease thyroid hormone production as effectively as prescription anti-thyroid drugs such as thiouracil.

Dr. Ulrike Peters co-authored a paper to be published in the Aug. 1 Journal of the National Cancer Institute. This links the consumption of cruciferous vegetables with a reduced risk of aggressive prostate cancer.

In an Article in the Fred Hutchinson Cancer Research Center, we read, "Greater consumption of dark green and cruciferous vegetables, especially broccoli and cauliflower, was associated with a decreased risk of aggressive prostate cancer. ... The Cancer Prevention Program's Dr. Ulrike Peters co-authored [this] study".

In another article, we read, "It is estimated that 70 percent of all cancers could be prevented through simple lifestyle changes, such as quitting smoking, watching your weight, eating a diet rich in vegetables and fruits, exercising regularly, and getting screened regularly for cervical, breast and colorectal cancer."
