THE OLIVE (OLEA EUROPAEA) is a species of a small tree in the family Oleaceae, native to the coastal areas of the eastern Mediterranean Basin. Its fruit, also called the olive, is of major agricultural importance in the Mediterranean region as the source of olive oil. The word derives from Latin "oliva" which in turn comes from the Greek elaia, ultimately from Mycenaean Greek e-ra-wa ("elaiva"). The word 'oil' in multiple languages ultimately derives from the name of this tree and its fruit.

By preventing the oxidation of cholesterol, the nutrients in olives help to prevent heart disease.
The health benefits of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Studies reveal olive oil offers protection against heart disease by controlling LDL "bad" cholesterol levels while raising HDL "good" cholesterol levels. Studies have shown that people who consumed 25 milliliters (mL) - about 2 tablespoons - of virgin olive oil daily for 1 week displayed less oxidation of LDL cholesterol and higher levels of antioxidant compounds, particularly phenols, in the blood. EXTRA VIRGIN olive oil, from the first pressing of the olives, contains higher levels of antioxidants, particularly vitamin E and phenols, because it is less processed. A second Spanish study found that olive oil 'turns down' genes linked to hardening of the arteries and heart disease.
Cancer Protection
Spanish researchers suggest olive oil may aid in colon cancer prevention. Their study showed rats fed diet supplemented with olive oil had a lower risk of colon cancer than those fed safflower oil-supplemented diets. The rats that received olive oil had colon cancer rates almost as low as those fed fish oil, which several studies have already connected to a reduction in colon cancer risk. Rudenski writes, "A patient here in Greece has cured his lung cancer with olive leaf juice after having gone to Athens and finding that person. He was consuming this for a year before the tumors disappeared from his lung". Research reveals the Mediterranean oil mounts a multi-pronged attack on the tumours, resulting in stunting their growth, driving their cells to implode and protecting against potentially-cancerous damage to DNA.
Anti-Inflammatory
Anti-inflammatory actions of the monounsaturated fats, vitamin E and polyphenols in olives, can contribute to the reduction of the severity of asthma, osteoarthritis, and rheumatoid arthritis, three conditions where a majority of the damage is caused by high levels of free radicals. The vitamin E contained in olives may even help to reduce the frequency and intensity of hot flashes in women who are going through menopause.

Olives of Israel

Olive trees are very hardy, drought, disease and fire resistant, and can live for a very, very long time. Its root system is very robust and capable of regenerating the tree even if the above-ground structure is destroyed. The older an olive tree is, the broader and more gnarled its trunk appears. Many olive trees in the groves around the Mediterranean are said to be several centuries old, and in some cases this has been verified scientifically.
An olive tree in Algarve, Portugal, is 2000 years old, according to radiocarbon dating.
Pliny the Elder told of a sacred Greek olive tree that was 1,600 years old. Several trees in the Garden of Gethsemane (from the Hebrew words "gat shemanim" or olive press) in Jerusalem are claimed to date back to the time of Jesus.
According to a recent scientific survey, there are dozens of ancient olive trees throughout Biblical Palestine, 1,600-2,000 years old, from even before the rise of Islam. Specifically, two giant olive trees in the Arab town of Arraba and five trees in Deir Hanna, both in Galilee region, have been determined to be over 3,000 years old. All seven trees continue to produce olives.
A tree located in Santu Baltolu di Carana (municipality of Luras) in Sardinia, Italy, named with respect as the Ozzastru by the inhabitants of the region, is claimed to be 3,000 to 4,000 years old according to different studies. In the same natural garden, a few other millenary trees can be admired.
