THIS ORANGE COLORED VEGGIE is not just for horses and rabbits.The Carrot has been the perfect ingrediant for many dishes from muffins, salads, dips and cakes however this sweet root plant is pefect for juicing and is one of the most used veggies for juicing for over 50 years. It is the best way to drink up a whole lot of Vitamin A. Native to Afghanistan, Carrots were cultivated in the Mediterranean region as early as 500 B.C and is known in science as Daucus carota, a name tracing back to ancient Roman writings of the 3rd century. Carrots belong to the Umbelliferae family along with other nutricous roots such as parsnips, fennel caraway, cumin and dill, which all have the same umbrella-like flower clusters.
Have you ever seen a purple colored carrot? What about a white, yellow, red or black carrot? Most people haven't. However, such carrots have existed for hundreds of years. They are available in "Rainbow Packs" in good health food stores. Carrots were originally purple or red, with a thin root. Orange carrots arrived from natural mutations of yellow forms, and then by human selection and development, probably in the Netherlands.
No other vegetable or fruit contains as much carotene as carrots, which the body converts to vitamin A. Carrots can be selectively bred to produce different colours. One particular variety lacks the typical orange pigment from carotenes, deriving its white colour to a recessive gene for tocopherol (Vitamin E). Originated from Daucus carota L. and patented (US patent #6,437,222) at the University of Wisconsin–Madison, the variety is intended to supplement the dietary intake of Vitamin E.
The Carrot's antioxidant compounds protect the body against cardiovascular disease. When six epidemiological studies looking at the association of diets high in carotenoids and heart disease were reviewed, the research showed that high-carotenoid diets are associated with a reduction of the risk of heart disease. In one study that examined the diets of 1,300 elderly persons in Massachusetts, those who had at least one serving of carrots and/or squash each day, had a 60% reduction in their risk of heart attacks compared to those who ate less than one serving of these carotenoid-rich foods per day.
Cancer Protection
Beta-carotene from Carrots is an important antioxidant which is effective in fighting against cancer, especially lung cancer. In research studies, rats fed either raw carrots or even just falcarinol -- an antioxidant extracted from carrots -- demonstrated a delay in the growth of colon tumors. High carotenoid intake has been linked with a 20% decrease in postmenopausal breast cancer. Extensive human studies suggest that a diet including as little as one carrot per day could conceivably cut the rate of lung cancer in half. And also, an article in Science Daily explains how pectin, a type of fiber found in fruits and vegetables and used in making jams and other foods, kills prostate cancer cells.

Now, there was a study in which heavy, long-term cigarette smokers were given synthetic beta-carotene. This did not appear to prevent them from developing lung cancer. Well, not only is synthetic beta-carotene not biochemically identical to the real stuff found in carrots, but scientists now believe that a carrot's protective effects are the result of a team effort among several substances abundant in carrots, including alpha-carotene. This is another, less publicized carotenoid. A recent National Cancer Institute study found lung cancer occurence was higher in men whose diets did not supply a healthy intake of alpha-carotene.

Only a Perfect God could and did create the wonderful Carrot, and we should expect synethics to be no match to what God has made.

While studying the relationship between vitamin A, lung inflammation, and emphysema, and common carcinogens in cigarette smoke, Baybutt's earlier research had shown that laboratory animals... fed a vitamin A-deficient diet developed emphysema. One of his animal studies indicates that not only does the benzo(a)pyrene in cigarette smoke cause vitamin A deficiency, but that a diet rich in vitamin A can help counter this effect, thus greatly reducing emphysema. Richard Baybutt, a professor at Kansas State University believes vitamin A's protective effects may help explain why some smokers do not develop emphysema.
