THE SWEET POTATO, known as the Ipomoea batatas, is a plant that belongs to the morning glory family. The important thing here to grasp is that a Sweet Potato is a large, starchy, sweet tasting tuberous root. They are an important root vegetable brimming with life sustaining nutrients. Scarlet O'Hara had a 19-inch waist, which she kept by eating the sweet potato her nanny prepared for her before filling up on party fare.

The African word "nyami", was adopted in its English form, "yam". Yam is the common name for some perennial herbaceous vines cultivated for the consumption of their starchy tubers in Africa, Asia, Latin America and Oceania. Unlike the Sweet Potato, the Yam is a vine, not a root. While it does not have the same taste, there are many variations of the sweet potato, with flesh spanning from white, yellow, orange and purple. Moreover, the shapes and sizes span from being short and thick to long and thin.

As you can see when comparing the nutritional charts above, it is obvious that there is a big difference. However, the yams, while not fully loaded with nutrition, the flavor turns any veggie drink into a sweet creamy wonderful holiday drink everytime you juice. I use it all the time, and you won't regreat it, you'll just say yummm!

This is a Sweet Potato in flower. I like to show the flowers to glorify God not only as the Creator of the vital nutrient packed root, but also of the beautiful flower. Jesus put it this way, "I am the Root and the Offspring of David, and the bright Morning Star" (Rev. 22:16). God wants us not only to glorify him for the root, but also for the fruit of his creation.

Consumption of this potassium containing root can help to prevent heart attack and stroke. It helps maintain fluid and electrolyte balance in the body's cells, as well as normal heart function and blood pressure.

Cancer Protection

Beta-carotene, the key antioxidant and anticarcinogen, (the pigments responsible for the color of the peel of the sweet potatoes), and vitamin-C, are very beneficial for curing many types of cancer, mainly those of colon, intestines, prostrate, kidneys and other internal organs.

Japanese researchers prepared extracts of baked sweet potato and studied its anti-cancer activities. They found that extracts which contained high phenolic compounds showed significant radical scavenging effects against the DPPH radicals. In addition, these extracts suppressed the proliferation of human myelocytic leukemia HL-60 cells with apoptosis induction in a dose-dependent manner. These extracts also blocked TPA-induced cell transformation in muse skin JB6 cell line.

Indian researchers studied 64 cases of gallbladder cancer and they concluded that a significant reduction in odds ratio was seen with the consumption of radish, green chilli and sweet potato among vegetables, and mango, orange, melon and papaya among fruits. Anthocyanin is responsible for this effect. Japanese researchers found that the anthocyanins from extracts of tuber of purple sweet potatoes (Ipomoea batatas cultivar Ayamurasaki) had strong anti-oxidative activities.

Diabetes

Contrary to the popular belief, sweet potatoes are beneficial for diabetics. They are very effective in regulating blood sugar levels by helping proper secretion and function of insulin. Of course, that does not mean that diabetics should eat them without any caution. The idea is that they can replace their rice or carbohydrate intake with sweet potatoes. It has been given the recent classification of an "antidiabetic" food. Sweet Potato has been given this label because of the recent animal studies that showed that the Sweet Potato helped stabilize blood sugar levels and decreased insulin resistance. Some of its blood sugar regulatory effects may come from the fact that Sweet Potatoes are concentrated in carotenoids. Research has suggested that physiological levels, as well as dietary intake, of carotenoids may be associated with insulin resistance and high blood sugar levels.

A Purple Sweet Potato with Antiangiogenic Components Shows Increased Anti-Cancer Activity

A Kansas State University researcher is studying the potential health benefits of a specially bred purple sweet potato with anti-cancer properties. Soyoung Lim, a doctoral student, and Dr. George Wang, Associate Professor of Human Nutrition at Kansas State, bred purple sweet potatoes to contain unusually high amounts of anthocyanin, a pigment that renders the purple hue in the vegetable. Anthocyanins can be red, blue or purple depending on the source's chemical structure, and are also found in foods such as blueberries, black raspberries, red grapes and red cabbage. Anthocyanins are known to have antiangiogenic properties, and high intake of foods containing this family of molecules has been associated with a reduced cancer risk in epidemiology studies.
